We love the pulled pork from Costco. It’s way more than we need for one meal, though, so I’m always looking for ways to use up the leftovers.
Then one day I thought, Why Not Breakfast?
Pictured here is some “naked” pulled pork cooked in a pan until it begins to get a nice crisp on the edges. I then pour on a low-sugar BBQ sauce, plate the pork and top with an over-easy egg (cooked in grass-fed butter in a separate pan). Salt & pepper & ready to enjoy in about 8 minutes.
Cooking is serious business.
Just kidding! If it isn't fun, easy, and delicious, then what's the point? More and more families (including ours) are choosing a high fat/low carb & low sugar lifestyle for its numerous health and weight loss benefits. With a little creativity and planning, eating this way can be simple, delicious, and life-changing.
