Why high-fat/low-carb?
I read Why We Get Fat: And What To Do About It by Gary Taubes, and it completely changed my understanding of nutrition, diets, and losing weight. I do recommend reading this book when you have the chance, but to sum up hundreds of pages of scientific explanations and research findings -- eating carbohydrates and sugar leads to increased blood sugar, which leads to increased insulin production, which leads to fat storage. Period. Fat by itself does not make us fat (stop buying "low-fat"!). "Calories in/calories out" and the idea that "a calorie is a calorie" are not based on sound research, yet have been promoted in public policy and by processed food/beverage companies ad nauseum. Bottom line: Low-fiber carbs and added sugar make us fat and cause disease. Of course there is a bit more to the story, including genetics, existing medical conditions and whether someone is already carrying around extra fat, but generally reducing carbs/sugar leads to weight loss, improved health, increased energy, and an unexpected benefit - lower grocery bills!
What we eat MATTERS, and what we are feeding our children REALLY MATTERS. They can either be set up for a long, healthy life, or the opposite. The good news is that cutting out processed food and eating low carb is not that hard once you get going. While it may take more planning and prep up front, you will be getting more lasting energy and enjoyment from the food you eat! |
